8.30 – 10.00 Visit of Parmigiano Reggiano Cheese production
You will watch behind the scenes the master cooking, separating the rich whey and lifting this magnificent DOP product and gain sight into the particular methodology he uses. The shaping and salting rooms are equally enthralling as we begin to realise the enormous amount of care and daily toil this product requires. Moving on from the salting vaults we enter the ageing room: the stagionatura. Here among 2000 wheels is where the fullest, richest aroma ignites the senses as we learn how after 12 months the Consorzio experts, test and skillfully hammer the cheeses before the ritual of branding. Only then do the 38 kilogram wheels that pass this test finally mature on wood for 2 or more years. Tastings of different seasoned cheese at the end.
10.00 – 10.15 drive to Montecchio Emilia area
10.15-11.30 Visit of Traditional Balsamic Vinegar producer
The Balsamic tour takes us into the unchanging world of the wine and balsamico maker. Firstly you will see the splendid 40 acre vineyards and be guest of this supplier of top outlets across the world… including Harrods of Knightsbridge London. We can then visit the Lambrusco Museum before entering the world of the balsam makers – 4 generations continuing 100 years of family tradition winning the Gambero Rosso in 2011 and World Wine Challenge for best sparkling wine in 2010. The finest of the annual grape yeild are crushed and the “must” is then slowly boiled over charcoal for 24-30 hours. The ‘must’ is aged and decanted in different woods for a minimum of 12 years. You will visit the Must maturing room and the batteria lofts and taste 15 year old, 22 and 28 year old Balsamico from the antique barrels. . 11.30 – 11.50 drive to Langhirano area
11.50 - 13.00 Visit of Prosciutto di Parma
We will see where the fresh haunches are selected an salted. Then visit the cooling, salting and “resting” rooms, each emulating the traditional winter to spring curing seasons. Best of all we will take you to the cellar branding areas where the “Naso” or master nose deciphers the perfume of only the perfect product for the ultimate branding of the twin crowns of Parma Ham – fit for the tables of the top restaurants of Parma, Italy and the World. After the visit of the Prosciutto producer, you willl be taken to a food boutique nearby, at the foothill of beautiful Torrechiara castle, for a little tasting of Prosciutto and typical Parma’s specialities.
NOTE: These are private and self driven tours. A car is essential for your visit; the farms are located in different areas (depending on the land of origin of the products) and it s not possible to take public transport to transfer from one plant to the other. If you have not a car, we can offer you with a surcharge a small economy car for rental ( we can deliver it at your hotel in Parma, or at Parma train station) You can drive it yourself all along the tour.
